Filet Mignon, marinated with rum, soy sauce, garlic and shallots, and broiled until medium rare.
In shallow dish mix together rum, soy sauce, garlic, shallot and red pepper. Add four 1 1/2 inch thick filet mignons. Cover and refrigerate two hours, turning occasionally.
Remove steaks from marinade and brush lightly with oil. Broil in preheated broiler, 6 inches from heat for 1 minute each side. Turn and broil until medium rare. Arrange filets on serving platter and garnish with watercress, sliced radishes and cucumber spears.

This recipe is worthy fare and serves beautifully at dinner parties.
