Flank Steak Pasta Salad


Flank steak and soba noodles mixed with a oriental flavored vinaigrette. A cool solution for a hot summer day.



Ingredients:

  • 10.5 oz package of soba noodles
  • 1 1/2 lb flank steak
  • 1 Tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 red bell pepper, julienned
  • 6 scallions, chopped
  • 1/2 cup shredded carrots
  • 1/2 cup sesame oil
  • 1/4 cup rice wine vinegar
  • 2 Tbsp ginger, minced
  • 2 tsp hot sauce
  • 2 tbs soy sauce
  • 2 tsp garlic, minced

Method

Cook noodles as directed on package. Rub both sides of steak with oil and season with salt and pepper. Grill on grill pan or under broiler for 3-4 minutes per side until desired doneness. Let rest 15 minutes and slice against the grain in thin strips; cut longer strips in half. Add steak, bell pepper, scallions and carrots to cooled noodles. Prepare dressing by whisking remaining ingredients. Pour over salad and toss to coat. Refrigerate until ready to serve. Serve cold or at room temperature.
