Goat Cheese and Spinach Meatloaf

Meat loaf with an unusual twist--a savory filling of goat cheese, spinach and a cilantro flavored spice mix.
 

Ingredients

  • Meatloaf:
  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 4 oz goat cheese, crumbled
  • 1 handful fresh spinach leaves
  • 1/2 tsp garlic, finely minced
  • 1 tsp Goya Recaito cilantro cooking base
  • Salt and pepper to taste
  • Glaze:
  • 8 oz can tomato sauce
  • 1/2 cup light brown sugar
  • 1 tsp prepared mustard
 
Method

Preheat oven to 350 degrees. Mix beef, breadcrumbs, garlic, Recaito, salt and pepper in a large bowl; combine thoroughly. Spread a piece of plastic wrap on to a flat clean surface. Scoop meat mixture onto paper, then spread and flatten into a 1/8 inch thick rectangular sheet. Evenly distribute spinach in a single layer over meat. Sprinkle goat cheese over spinach, covering evenly. Starting at one side lengthwise, fold edge of meat slightly inwards, this helps it roll tighter and more securely. Using the plastic, roll forward while pressing filling inwards, making sure it's securely contained. Peel plastic away as you go to keep from inside of roll. End the roll by pinching edges together and smoothing evenly to seal. Fold ends by pressing inward and pinching to close tightly. Glaze: Mix brown sugar, tomato sauce and mustard in clean bowl. Place meatloaf into a standard loaf pan and spread half of glaze evenly over top. Cook for 1 hour or until cooked through. Heat remaining glaze on very low heat. Slice meatloaf and serve remaining glaze over slices as desired.

 

Notes: This is my first original recipe which I created while in high school. When I got married years later, it became my husband's favorite and introduced him to spinach.
