Greek Style Meatball Kabobs

Already prepared meatballs are skewered with bell peppers and seasoned perfectly. Once cooked, they are served with a homemade cucumber and yogurt sauce.

  • Servings: 18

Ingredients:

18 Bamboo Skewers, 6"es long
1× 18 oz pkg Frozen Fully Cooked Beef Meatballs, defrosted
1 Red Bell Pepper, cut into ¼" pieces
1 Green Bell Pepper, cut into ¼" pieces
½ tsp Greek Seasoning or Oregano
1 cup Plain Greek Style Yogurt
½ tsp Grated Lemon Rind
½ cup Diced Cucumber
1 Large Clove Garlic, minced
¼ tsp Salt
⅛ tsp Pepper

Directions:

Heat oven to 350 degrees. Soak bamboo skewers in water for 10 minutes and drain. Alternately thread meatballs and bell pepper pieces onto skewers. Place kabobs in single layer in shallow baking pan. Sprinkle skewers evenly with Greek seasoning or oregano. Bake at 350 degrees for 20 minutes. Meanwhile, combine remaining ingredients in a small bowl. Serve the sauce with the meatball skewers.
