GRILLED FILET MIGNONS WITH WARM STILTON SAUCE

These beef steaks from the tenderloin are grilled and served with a rich sauce of whipping cream, white wine, sour cream & stilton--a blue cheese.
Ingredients
- 6 beef filet mignon steaks
- 1 teaspoon salt
- 1 teaspoon freshly ground pepper
- 3/4 cup dry white wine
- 1/2 cup heavy whipping cream
- 3 tablespoons sour cream
- 1 clove garlic, minced
- 2 ounces Stilton cheese, crumbled
- 1/2 teaspoon dried oregano
- 6 fresh basil leaves, chopped

Method
Sprinkle steaks with salt and pepper. Set aside. In a medium saucepan, cook wine over high heat until it is reduced by about half. Reduce heat to medium and add the cream, stirring frequently until mixture is reduced to about a third. Add sour cream, garlic, Stilton, oregano and basil. Continue to stir the mixture until cheese melts completely and the sauce is smooth and creamy. Keep warm. Set grill to medium-high heat. Grill to desired doneness, about 5 minutes per side for medium-rare. Transfer steaks to a large serving platter and spoon desired amount of sauce on top. Pass the remaining sauce at the table.
Notes: The steaks are great with baked potatoes done on the grill.
