Grilled Roast Beef Paninis with Honey Mustard

Roast beef panini sandwiches made with sourdough bread, onions and mushrooms sauted in marsala wine, and two kinds of cheese. Crispy, delicious, and easy!

1 Tbsp Extra Virgin Olive Oil
1 Tbsp Unsalted Butter
2 Small Onions, sliced
½ cup Mushrooms, sliced
½ cup Marsala Wine
2 Tbsp Honey Mustard
2 Pinches of Sea Salt
12 slices Sourdough Bread
Honey Mustard, to spread on bread
Mayonnaise, to spread on bread
6 slices Sharp Cheddar Cheese
½ lb Toscano Cheese With Black Pepper
1 lb sliced Roast Beef


Add olive oil, butter, and onions to a small sauté pan and cook until soft, about 7 minutes. Add mushrooms and Marsala wine. Stir in 2 Tablespoons mustard, and salt. Remove from heat and set aside until ready to assemble sandwiches. Preheat a Panini grill pan. Set out the sourdough bread on a cutting board. Spread honey mustard on one side and mayonnaise on the other side of bread. Place the sharp cheddar on one side of each sandwich and Toscano Pepper Cheese on the other. Pile 4-5 slices of roast beef on half of each sandwich, followed by grilled onions. Place top on each sandwich and brush each side with olive oil. Grill sandwiches on Panini grill until crispy and serve.

Helpful Tips:

If you are unable to find the Toscano Pepper Cheese, the sharp cheddar can be substituted. I found the Toscano Pepper Cheese at Trader JoeÂ’s.
