Grilled Marinated Steak Stuffed with Grilled Vegetables


Beef steaks are marinated in a mixture of lemon juice, dried basil, paprika and habanera peppers. The meat is grilled and served with vegetables (sweet peppers, mushrooms, and onion) that are grilled on foil. The remaining marinade is heated with the seeds from the habanera peppers, and passed with the steak.



Ingredients:

  • Marinade:
  • 1 cup lemon juice
  • 4 tsp. dried basil
  • 4 tsp. paprika
  • 1/2 tsp. salt
  • 5 habanero peppers
  • 3 beef steaks
  • Sliced red and yellow sweet peppers
  • 2 1/2 cups halved mushrooms
  • 2 cups sliced onions
  • Habanero pepper seeds (reserved from earlier)

Method

In bowl mix lemon juice, basil, paprika, and salt. Halve peppers; remove seeds; put seeds in container and store in refrigerator. Grill habanera peppers on foil about six minutes on each side. Mince peppers then mix with marinate mixture. Halve steaks and put in ziplock bag with marinade and let set in refrigerator for four hours. Drain and save marinade; will need it later. Steak Grill steaks, depending on how you like it cooked. While grilling steaks, place vegetables on foil and grill the sliced sweet peppers for four minutes on each side, grill onions until golden brown, and grill mushrooms for five minutes on each side. Heat marinade on stove until hot, adding reserved habanera pepper seeds. Put one half of steak on plate and add vegetables on top with a drizzle of marinade, and then place other half of steak on top. Repeat for two more servings. Add little bit of veggies on side (if any) and drizzle with marinade.

Notes: When grilling peppers make sure they don't burn. They grill faster or slower depending on heat of grill, and grill all vegetables on tin foil.
