Grilled Rib Eyes with Rosemary Garlic Marinade


Melted Gorgonzola cheese and caramelized onions top this rib eye making it a great treat.



Ingredients:

  • Rosemary Garlic Asian Marinade:
  • 3 tbsp extra virgin olive oil
  • 1 tbsp fresh rosemary, remove stems
  • 2 garlic cloves, minced
  • 2 tbsp plum preserves
  • 1 tbsp light brown sugar
  • 1/4 cup plum wine
  • 1/4 cup Worcestershire sauce
  • 2 tsp minced ginger
  • 2 tsp corn starch
  • 1/4 cup soy sauce
  • 1/2 tsp fresh ground pepper
  • 4 1 inch thick rib eyes
  • 2 tbsp butter
  • 2 large red onions, sliced
  • 1 tbsp light brown sugar
  • 1/2 tsp fresh ground black pepper
  • 1/2 cup crumbled Gorgonzola cheese

Method

Remove stems from rosemary and combine all marinade ingredients in a blender. Process until smooth. Place in a large container with lid. Marinate steaks for 1-3 hours in refrigerator. Meanwhile prepare caramelized onions. In a large skillet melt butter over medium high heat. Cook onions for about 8-10 minutes or until golden, stirring frequently. Stir in brown sugar and pepper, cook until sugar has melted. Keep warm until ready to use. Grill steaks 4-6 inches from medium high coals or gas grill for 8-10 minutes, turning once. One minute before steaks are to be removed from grill, top with crumbled Gorgonzola cheese and onions. Serve immediately.

Notes: After marinating these steaks, this is a very fast main dish. The melting Gorgonzola cheese over the onions and steaks is a delightful surprise with the first bite and each bite afterwards. The juices from the steak, onions, and cheese makes a wonderful sopping sauce for your garlic toast.After marinating these steaks, this is a very fast main dish.
