Gringo Enchiladas


This enchilada dish is a mixture of cooked ground beef with taco seasoning, pinto beans, cream of chicken soup and (Rotel) tomatoes with green chilies, layered with flour tortillas and Mexican-type cheese.



Ingredients:

  • 1 1/2 lb lean ground beef
  • 1 pkg Taco seasoning mix
  • 1 15 oz. can Pinto beans, undrained
  • 1 can Cream of Chicken* soup
  • 1 can Hot (or mild) Rotel tomatoes**
  • 1 pkg flour tortillas (taco-size)
  • 6 cups Kraft** Mexican cheese

Method

Heat oven to 350. Brown meat & drain. Combine meat, taco seasoning, pinto beans (do not drain), cream of chicken soup, and tomatoes in mixing bowl, stirring well. Layer the bottom of 9x9 pan with mix just enough of the soup mixture to cover. Tear tortillas into four pieces and place on top of mixture until covered. Layer on top of tortillas the meat mixture as before, then top with cheese. Continue until out of ingredient or until pan is full (about four layers), ending with cheese on top. Place in oven about 30 minutes or until cheese in center is melted. Top with your favorite hot sauce and enjoy!

Notes: *Can be substituted with Cream of Mushroom **Brand can be substituted
