Harvest Casserole


A quick and easy casserole, made with ground chuck, mushrooms, green beans, onions and potatoes, in a creamy mushroom sauce with cheese.



Ingredients:

  • 1 pound ground chuck
  • 1 cup button mushrooms, sliced
  • 1/2 pound fresh green beans, French-cut style
  • 1 medium onion, sliced
  • 3 medium potatoes, sliced thinly
  • 1 can cream of mushroom soup
  • 1 can evaporated milk
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 8 ounce bag sharp cheddar cheese shredded

Method

Brown ground chuck in skillet and pour off grease. Spray 9 x 13 baking pan with non-stick spray. Place ground chuck in bottom of pan. Layer mushrooms over ground chuck, green beans over mushrooms, onion over green beans and potatoes over onions. Mix cream of mushroom soup with evaporated milk plus salt and pepper. Pour over potatoes and top with cheese. Cover with foil. Bake at 350 degrees for 45 minutes. To brown the top, remove foil 7 minutes before done.

Notes: This is a great everyday casserole that is very easy to make.
