A quick and hearty meal of ground beef, onion, and corn in stewed tomatoes seasoned with thyme and bay leaf.
Ingredients
- 1 pound lean ground beef
- 1 large onion, chopped
- 1 can (16 oz) stewed tomatoes, drained
- 1 can (8-3/4 oz) whole kernel corn, drained
- 1-1/2 tsp. thyme
- 1 tsp. salt
- 1/4 tsp. crushed red pepper
- 1 bay leaf, crumbled

Method
In a large heavy skillet over medium high heat, cook beef and onion, stirring to break up meat, until beef is browned and onion tender. Drain off fat. Stir in remaining ingredients until blended. Bring to boil; reduce heat; simmer uncovered; stirring often, 10 minutes or until mixture thickens and flavors blend.
