Ingredients:
| 1½ lb | Ground Round |
| 1 lb | Ground Pork |
| 6 slices | Cooked Bacon, crumbled |
| 1½ cups | Cracker Crumbs |
| 1 | Envelope Onion Soup Mix |
| 2 tsp | Garlic Powder |
| ½ tsp | Pepper |
| 2 | Eggs |
| ¾ cup | Teriyaki Sauce |
| ½ cup | Ketchup |
| 3 | –4 Slices Pineapple, canned in juice |
| 3 | –4 Maraschino Cherries |
| ⅓ cup | Pineapple Juice, from canned pineapple |
| ¼ cup | Brown Sugar |
| 1 Tbsp | Rice Wine (or Cider) Vinegar |
Directions:
Preheat oven to 350 degrees.
Place the ground beef, pork, crumbled bacon, cracker crumbs, soup mix, garlic powder, and pepper in a large bowl, and mix well. Add eggs, teriyaki sauce and ketchup. Pat into a loaf shape, and place in a broiler pan with rack. Arrange pineapple rings on top of meatloaf, and place a maraschino cherry in center of each pineapple ring. Bake for 60–70 minutes, or until a meat thermometer inserted in loaf’s center registers 160 degrees.
While meat loaf is baking, combine pineapple juice, brown sugar and vinegar in a small saucepan. Bring to a boil and cook for 4 minutes, or until slightly syrupy. Spoon over meat loaf about 15 minutes before done to make a nice glaze.
Helpful Tips:
Both bacon and cherries are optional, and the meatloaf tastes just fine without them.
