|6 slices||Cooked Bacon, crumbled|
|1½ cups||Cracker Crumbs|
|1||Envelope Onion Soup Mix|
|2 tsp||Garlic Powder|
|¾ cup||Teriyaki Sauce|
|3||–4 Slices Pineapple, canned in juice|
|3||–4 Maraschino Cherries|
|⅓ cup||Pineapple Juice, from canned pineapple|
|¼ cup||Brown Sugar|
|1 Tbsp||Rice Wine (or Cider) Vinegar|
Preheat oven to 350 degrees.
Place the ground beef, pork, crumbled bacon, cracker crumbs, soup mix, garlic powder, and pepper in a large bowl, and mix well. Add eggs, teriyaki sauce and ketchup. Pat into a loaf shape, and place in a broiler pan with rack. Arrange pineapple rings on top of meatloaf, and place a maraschino cherry in center of each pineapple ring. Bake for 60–70 minutes, or until a meat thermometer inserted in loaf’s center registers 160 degrees.
While meat loaf is baking, combine pineapple juice, brown sugar and vinegar in a small saucepan. Bring to a boil and cook for 4 minutes, or until slightly syrupy. Spoon over meat loaf about 15 minutes before done to make a nice glaze.
Both bacon and cherries are optional, and the meatloaf tastes just fine without them.
