Hearty Beef Stew

Beef stew meat is cooked in a slow electric crockery cooker (crock pot) along with potatoes, onion, carrots, corn, green beans and peas (if desired), in beef and vegetable broths.
 

Ingredients

  • 1/2 cup flour
  • 1/4 teaspoon EACH of salt, pepper and cajun seasoning
  • 1 1/2 to 2 lbs. stewing beef, cut into bite-size pieces
  • 1/4 cup oil
  • 1 1/2 cups beef broth
  • 4-6 Medium Potatoes, cubed
  • 2 Medium Onions, cut into bite-size wedges
  • 4 to 6 Medium Carrots, sliced
  • 2 cups canned or frozen Corn
  • 2 cups canned or frozen yellow or green beans
  • 2 cups canned or frozen Peas (optional)
  • 1 1/2 cups vegetable broth

Method

Place flour in a bag with seasonings and flour pieces of beef; brown in oil in skillet. Drain. Once meat is browned, place in bottom of slow cooker, add beef broth, potatoes, carrots, onions, and remaining vegetables. Pour in vegetable broth, lightly sprinkle with salt and pepper. Cover and place setting on high. Let cook for 4-5 hours or desired time. (Or cook 8 to 10 hours on Low.)

 

Notes: There is no need to use a thickening agent. Stew will thicken on its own...
