Hot and Spicy Cube Steaks

Beef cubed steaks are quick-cooked in a skillet and served on top of roasted red peppers, cherry peppers, mushrooms and onions on rice.
 

Ingredients

  • 1 12-oz jar roasted red peppers, marinated in oil and garlic
  • 3 tbsp cherry peppers in olive oil
  • 6 oz sliced button mushrooms
  • 1 large onion, sliced thin
  • 1 tbsp salt (or to taste)
  • 1 tbsp black pepper (or to taste)
  • 4 cube steaks
  • 3 cup hot cooked white rice

Method

Drain olive oil from the jar of roasted red peppers and cherry peppers into a large saute pan. Saute onions and mushrooms in olive oil until soft. Cut red peppers into bite-sized pieces and add to mushrooms and onions. Saute an additional 5 minutes until all ingredients are blended. Remove onions, mushrooms and peppers with a slotted spoon onto rice on a platter and keep warm. Place steaks into same pan and saute for three minutes on each side. Serve on top of mushrooms, onions, peppers and rice.

 

Notes: Roasted red peppers and cherry peppers can be purchased either with or without olive oil. Those used in this recipe should not contain vinegar in the ingredients.
