Jamie's Lasagna Casserole


A seasoned mixture of cooked ground beef and tomato paste makes up one of the layers of this lasagna dish, along with ricotta cheese, mozzarella cheese, and lasagna noodles, and parmesan cheese on top before baking.



Ingredients:

  • 1 lb. ground chuck  
  • 1 Tbsp. dried minced onion  
  • 1/4 tsp. garlic powder  
  • 1 tsp. chopped parsley  
  • 2 6-oz. cans tomato paste  
  • 2 cups water  
  • 1/2 tsp. salt  
  • 1/2 tsp. pepper  
  • 8 oz. lasagna noodles  
  • 2 eggs, beaten  
  • 3/4 lb. ricotta cheese  
  • 12 oz. shredded mozzarella cheese  
  • Grated Parmesan cheese

Method

Brown beef in a large heavy pan. Add onion, garlic, parsley, tomato paste, water, salt, and pepper. Bring to boiling, reduce heat. Cover and simmer 1 hour. Meanwhile, cook lasagna noodles as directed on package. Mix together eggs and ricotta cheese. In a 13x9-inch baking pan, spread 1/2 cup sauce, then alternate layers of noodles, meat sauce, ricotta-egg mixture, and mozzarella, until pan is filled, and ending with a layer of sauce. Sprinkle with Parmesan cheese. Bake at 375 degrees about 30 to 40 minutes, or until heated through.
