Karen's Favorite Chili

Karen's favorite chili will soon be yours with all of the peppers, onions, and beef that have been simmered with green chiles and tomatoes.
 

Ingredients

  • 1 lb extra lean hamburger
  • 1 large onion, chopped
  • 3 stalks celery chopped
  • 2 Tbls olive oil
  • 2 med bell peppers, chopped (or add more if you like)
  • 1/2 tsp garlic powder (or to taste)
  • 4-15 oz cans crushed or chopped tomatoes
  • 2 beef boullion cubes
  • 1-4 oz can of green chiles, chopped
  • 1 Tbsp cumin
  • 2 Tbsp chili powder
  • 1 tsp oregano
  • 1 or 2 cans of pinto beans
 
Method

Cook onions and celery in olive oil until soft. Add hamburger and brown. Drain off fat. Add remaining ingredients except beans. Bring to a boil then simmer for at least 1 hour. The longer you simmer the better it gets. Add beans. You can always adjust seasonings to your liking. I don't think this dish needs any added salt, but you might.
