Karen's favorite chili will soon be yours with all of the peppers, onions, and beef that have been simmered with green chiles and tomatoes.
Cook onions and celery in olive oil until soft. Add hamburger and brown. Drain off fat. Add remaining ingredients except beans. Bring to a boil then simmer for at least 1 hour. The longer you simmer the better it gets. Add beans.
You can always adjust seasonings to your liking. I don't think this dish needs any added salt, but you might.
