Kay's Beef Stew


This classic stew recipe is full of flavor and will produce a filling and delicious dinner with succulent and tender beef.



Ingredients:

  • 2 lb beef stew meat
  • 2 tbsp butter
  • 4 cup boiling water
  • 1 tsp lemon juice
  • 1 1/2 tsp Worcestershire sauce
  • 1 clove garlic
  • 1 medium onion, diced
  • 2 bay leaves
  • 2 tsp salt
  • 1 tsp pepper
  • Dash cayenne pepper
  • 1 tsp sugar
  • Small bag baby carrots
  • 2 baking potatoes
  • 10-24 pearl onions
  • 1/4 cup cornstarch in 1/4 cup cold water
  • Olive oil for sauteing

Method

Brown stew meat in a small amount of olive oil. Meat can be salted to taste. Add boiling water, lemon juice, Worcestershire sauce, garlic, diced onion, and seasonings. Simmer 2 hours, stirring often to keep from sticking. Peel and saute pearl onions in olive oil with a sprinkling of salt until translucent. Add pearl onions, baby carrots, and cubed potatoes and continue simmering 25-30 minutes or until vegetables are the tenderness preferred. Place a colander into a large bowl and remove meat and vegetables from juices (remove and discard bay leaves). Add corn starch and cold water mixture to juices to thicken. Add meat and vegetables back to thickened juices.

Notes: If needed, more water can be added during simmering process.
