Kent's Football Chili


Try this hot Italian sausage combined with broth, lime juice, canned beans, corn, tomatoes, olives, green pepper, and onion, plus chili powder, paprika, cinnamon, cayenne, and cilantro for seasonings.



Ingredients:

  • 2 pounds hot-style Italian sausage
  • 3 cups chicken broth  
  • Juice of one lime or 3 Tbsp bottled lime juice
  • 1/4 cup chopped fresh cilantro  
  • 2 Tbsp. chili powder  
  • 1 Tbsp. paprika  
  • 2 tsp. cinnamon  
  • Cayenne pepper and salt, to taste  
  • 1 28 oz. can tomatoes (or 6 to 8 fresh tomatoes, peeled, cored and quartered)  
  • 1 14 oz. can chick peas, drained  
  • 1 14 oz. can white corn, drained
  • 1 14 oz. can black beans, rinsed and drained  
  • 1 14 oz. can butter beans, rinsed and drained    
  • 1 6 oz. can black olives, drained and sliced  
  • 1 green pepper, chopped  
  • 1 large onion, diced  
  • 2-3 jalapenos, sliced very thin

Method

Cook sausage in a large pot; drain off fat. Add broth first to the meat, then the rest of the ingredients, in the order given. Bring to boiling; reduce heat and cook, uncovered, over medium heat for one hour, or to desired consistency. Serve over cooked spaghetti or noodles with the following toppings: sour cream, cheddar cheese, additional chopped onion and/or lime juice.

Notes: Or use shredded cooked beef or chicken instead of the sausage, and omit the precooking.
