Kid Crazy Meatloaf

Your kids won't even notice the mixed vegetables rolled up in this savory, cheesy meat loaf.
 

Ingredients

  • 2 lbs ground beef
  • 1 tbsp dried minced onion
  • 3 tbsp Mrs. Dash original seasoning
  • 2 tbsp Mrs. Dash garlic and herb seasoning
  • 1 14 oz can diced tomatoes
  • 1 15 oz can mixed vegetables
  • 1 cup shredded cheddar cheese

Method

Form ground beef into a ball as you would for bread dough. Place on center of a 2 foot piece of wax paper. Roll ground beef out as long and wide as the wax paper. It should be 1/2 to 1 inch thick. Sprinkle Mrs. Dash and onion on ground beef. Layer tomatoes, vegetables and cheese on top of ground beef. Carefully use wax paper to roll ground beef into a log shape. Remove paper as each roll is completed. Seal ends by pressing them inward. Wrap in aluminum foil and bake for 1.5 hours. During last 10 minutes of baking, open foil to allow even browning on top.

 

Notes: Meatloaf can be frozen before cooking for use at a future date. Sprinkle cheese on top before serving or add the all time kid favorite sauce, ketchup.
