Kofta Kebab Burgers


This recipe makes some great burgers that have a true Middle Eastern flavor. Traditional tzatziki and flat bread really transform this burger.



Ingredients:

  • 2 lbs ground chuck
  • 2 large red onions
  • 1/2 cup fresh chopped cilantro
  • 4 cloves garlic, finely chopped
  • 1 1/4 tablespoons kosher salt
  • 2 teaspoons cumin
  • 1/2 teaspoon cayenne
  • 2 tomatoes
  • 12 pieces Middle Eastern flat bread
  • 1 7 oz. container tzatziki sauce

Method

Preheat a greased grill pan over medium high heat. Place the ground chuck in a large bowl. Grate one of the onions and add 1/3 cup of grated onion to the meat. Add 1/4 cup of chopped cilantro plus the garlic, salt, cumin and cayenne. Mix to combine well. Form into 6 patties and set aside. Place the patties on the grill pan and cook for 4 minutes on each side for medium. Remove them from the heat and place them on a plate. Let them rest for 5 minutes. Slice the remaining onion and the tomatoes into thin slices and set aside. Take the flat bread, and using a large cookie cutter or knife, cut each piece into a circle slightly larger than the burger patties. Place each burger patty on a piece of flat bread and top with a few slices of onion and tomato. Sprinkle some chopped cilantro on top. Spread some tzatziki sauce on another piece of flat bread and place it on top. Repeat this process for the rest of the burgers and serve.
