Leek Stoup

This soup gets a great flavor from the leeks and garlic. The ground beef and rice make this a hearty dish and perfect for a meal.
Ingredients
- 2 large leeks
- 2 cloves garlic, minced
- 1 large carrot, chopped
- 1/2 pound ground beef
- 2 cups cooked rice
- Salt
- Pepper
- Bouillon cube
- Dried parsley
- 4 cups water

Method
Saute garlic, leeks and carrots until translucent and add ground beef. Saute until browned and add seasonings, water and bouillon cube. Let simmer for 1 hour on medium low heat, add rice and simmer for another 20 minutes. You may add more water as needed.
