Low-Cal Taco Wraps

Ground beef or chicken is cooked with vegetables and seasoned with taco seasoning flavors, then spooned onto lettuce, topped with extras, and rolled up.
Ingredients
- 1 pound of your favorite ground meat (beef or chicken is best)
- 1 head of iceburg lettuce
- 1 large ripe tomato
- 1 small sweet onion
- 4 large cloves of fresh garlic
- 1 yellow bell pepper
- 1/2 cup shredded jack cheese or pepper jack cheese
- 1 heaping TBSP tomato paste
- Taco seasoning mix as follows (or you can subsitute your favorite pre-packaged one) ...
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp chili powder
- 1 tsp corn starch
- 1/2 tsp sugar
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp oregano
- 1/2 tsp crushed red pepper flakes

Take your sweet onion and dice it fine until you have approx 1/4 a cup; set aside. Dice very fine all 4 cloves of fresh garlic and half of the yellow bell pepper; add to onions. In a skillet add the ground meat, onion-pepper mix, & garlic. Cook over medium heat until meat is cooked through. If you are using extra lean meat add a tsp or so of olive oil to prevent sticking and to help the onions cook. When meat is cooked, drain fat. Add all the seasonings listed under seasoning mix under ingredients or use your favorite brand of taco seasoning. Add 1/3 cup of water to meat mixture and stir in 1 heaping tablespoon of tomato paste. Simmer on top of stove for 12 to 15 min. While meat mixture is simmering take 1 head of iceberg lettuce and core. Pull leaves apart to separate and rinse under very cold water; drain and set aside. Take your tomato and de-seed it, leaving only the meaty part; dice into small cubes and set aside. Place shredded cheese in a bowl and set aside. This dish can be served so everyone can make their own or put together and set on plates. Take one large lettuce leaf and place in center of the plate; add 1 heaping TBSP of the meat mixture to the center of the leaf and spread it out. On top of the meat add a few of the diced tomatoes and sprinkle a little cheese. Taking the thinnest end of the lettuce leaf and place it over the meat then roll down one time; turn sides of lettuce inward and continue to roll. It is the same procedure as rolling stuffed cabbage rolls.
Notes: This is a very quick meal to prepare it takes less than 20 min. Feel free to add hot sauce or hot peppers. Try dipping the wraps in your favorite low-cal dressing. VERY low in calories and big on flavors using the lettuce as your shell gives you a great crunchy texture. Because you're only using 1 heaping TBSP of meat in each one, you can eat several with no guilt and it goes a long way!
