Magic Pumpkin Dinner

A mixture of ground beef, cooked rice, chopped vegetables, mushrooms and cream of chicken soup, plus a little soy sauce and brown sugar, is baked inside a pumpkin.
 

Ingredients

  • 1 medium pumpkin
  • 3 lb hamburger (ground beef)
  • 1/2 cup chopped celery
  • 1/2 cup chopped onions
  • 1/2 cup diced green pepper
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 4-oz can sliced mushrooms, drained
  • 1 10 1/2-oz can cream of chicken soup
  • 2 cups hot cooked rice

Method

Preheat oven to 375 degrees. Lightly grease a shallow baking pan large enough to hold the pumpkin; set aside. Place pumpkin on a firm surface, and using a knife, remove top of pumpkin and reserve. Remove and discard seeds and membrane. In a medium bowl, combine hamburger, celery, green pepper, onion, soy sauce, brown sugar, mushrooms, soup and rice. Spoon hamburger mixture into pumpkin and replace top of pumpkin. Place filled pumpkin in baking pan and bake about 1 hour until pumpkin is tender and meat filling is done. To serve, spoon some of the cooked pumpkin and the meat filling onto plates.

 

Notes: This is a great way to get your friends into the fall mood. They will be surprised when you put a pumpkin on the table, open it, and scoop out dinner. That is a memorable event.
