
These corn tortillas are filled with a little cooked ground beef, some raisins, and a bit of cinnamon-sugar before being rolled up. They are served with whipped cream.
Brown ground meat until cooked; drain and set aside. Fry all tortillas, one at a time, for a few seconds on both sides in vegetable oil, making sure to fry them only slightly, keeping the consistency soft. Lay a "finger-size" amount of the ground beef about 1-inch from edge; add about 8 to 10 raisins on top of the ground beef, then add a pinch of cinnamon and a pinch of sugar to the top of the raisins. Roll up the entire mixture; place it seam side down with a tooth pick in the center of each. Arrange on a platter with a bowl of unsweetened whipped cream in the center.
Notes:
You can make this ahead and microwave it later. Best if served within 2-3 hours.
