Maple Bacon Burger

Juicy grilled beef burgers topped with maple flavored bacon and a creamy herb mixture.Ingredients
- 4 pieces extra lean bacon
- 1 1/2 teaspoons maple syrup
- Topping mixture:
- 1/4 cup sour cream
- 1 tablespoon finely chopped chives
- 1 tablespoon finely chopped Italian parsley
- 1/4 teaspoon lime zest
- Burger ingredients:
- 3/4 pound ground chuck, 80% lean
- 3/4 pound ground sirloin, 90% lean
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- Other:
- 4 Ciabatti rolls, split and toasted
- 1 cup salad greens, rinsed and patted dry

Method
Preheat grill to medium high heat. Place bacon on paper towels, on a microwavable plate, and cook until crisp. Set a wire cooling rack on a baking sheet and transfer bacon to rack. Very lightly brush maple syrup on both sides of bacon. Return bacon to microwave safe dish and cook 30 seconds longer, then remove bacon and set back on wire rack until needed. Shape ground beef into 4 round firm patties and season each burger, on both sides, with 1/4 teaspoon salt and 1/4 teaspoon pepper. Grill burgers, turning once, for 5-7 minutes on each side, or to desired doneness. Meanwhile prepare topping mixture. Place all ingredients in a small mixing bowl and whisk until well blended. When burgers are almost done, set buns, flat side down, on grill until golden brown. Remove burgers from grill, cover with foil, and let rest 5 minutes. Cut bacon pieces in half, and assemble burgers as follows: salad greens, burger patties then spoon on cheese mixture and 2 pieces of bacon. Close sandwich with bun top and serve.
Notes: Sometimes you just want a burger that tastes like beef without a bunch of different ingredients mixed in the meat to change the flavor. This recipe does just that. Preperation time 15 minutes, cook time 15 minutes.
