Meatball Soup

Meatballs are made, using your own desired amounts for crumbs & seasonings, then baked and added to broth along with vegetables & pasta.
Ingredients
- 1 1/2 lbs ground beef
- Cracker meal or bread crumbs
- Oregano
- Salt
- Pepper
- Garlic powder
- Onion powder
- Worcestershire sauce
- 1 can diced tomatoes
- 1 medium onion
- 6 carrots, diced
- 3 stalks celery, diced
- 6 beef bouillon cubes
- 1 cup elbow macaroni
- 5 cup water
- Bay leaf

Method
Combine beef with next 7 ingredients more or less to taste. Roll meat mixture into balls and bake at 450 degrees until cooked through. In a soup pot, add celery and carrots to 5 cups water. Add all remaining ingredients, including cooked meatballs, but not the macaroni. Cook until vegetables are tender. Add macaroni to soup and simmer on medium until macaroni is cooked (do not over-cook macaroni). Remove bay leaf. Serve with Parmesan cheese and crusty bread or biscuits.
Notes: This is great to make on short notice and great on a cold day.
