Meatball Stew


Meatballs made with ground beef, onion and bread crumbs are cooked along with vegetables and seasonings in a tomato sauce and beef broth liquid. Dumplings are optional.



Ingredients:

  • 2 cans Beef Broth plus enough water to make 3 cups  
  • 1# lean ground beef  
  • 1/2 Cup bread crumbs
  • 1 egg  
  • 1/2 Cup finely chopped onion
  • 1 tsp salt  
  • 1/4 tsp pepper
  • 1-15 oz can tomato sauce  
  • 1 lb. carrots, sliced  
  • 4 C diced potatoes
  • 1 c. chopped onion  
  • 1/2 tsp sweet basil  
  • 1/2 tsp Italian seasoning  
  • 1 clove garlic, chopped  
  • 1 8 oz can peas, drained    
  • Bisquick Dumplings (optional)

Method

In Dutch oven heat beef broth and water. Combine the next 6 ingredients and shape into small balls; set aside. To Dutch oven add tomato sauce and next 6 ingredients. Heat till boiling. Add meatballs. Reduce to simmer, cover and cook 45 - 60 minutes or till vegetables are tender and meatballs are done. Add salt & pepper to taste and canned peas. Make dumplings as on package of Bisquick, if you want them.

Notes: If while boiling it should get so the liquid is not covering it, add a little water.
