Meatloaf Muffins


Individual meatloaf casseroles with beef, zucchini, hash browns, and cheese.



Ingredients:

  • 2 pounds extra lean ground beef (96% lean)  
  • 8 ounces zucchini -- shredded  
  • 2 eggs  
  • 2 cups Ore Ida Hash Browns  
  • 1 cup cheddar cheese, lowfat -- shredded
  • 1 package Kraft Stove Top Stuffing Mix (with seasoning packet)  
  • 1/2 cup parmesan cheese  
  • 1 teaspoon minced garlic  
  • 2 teaspoons worcestershire sauce  
  • 1/2 cup Heinz Ketchup  
  • 1/2 cup chopped onions    

Method

Preheat oven to 350F. Mix all ingredients together and use ice cream scoop to make 24 muffins and drop into tins. Bake for 40 minutes or until done.
