Meaty Mushroom Sauce with Noodles

This dish makes for a hearty meal and is simple to prepare. The mushrooms, onion and whole plum tomatoes season this meaty sauce perfectly.
 

Ingredients

  • 1 lb 80/20 ground beef
  • 1/2 lb button mushroom caps, sliced
  • 1/4 teaspoon oregano
  • 2 teaspoons fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 cloves fresh garlic, minced
  • 2 tablespoons unsalted butter
  • 1 tablesoon extra virgin olive oil
  • 1/4 cup dry white wine
  • 1 large can whole plum tomatoes, chopped
  • 1 large sweet onion, chopped
  • 2 bay leaves
  • 1/4 cup light cream or half and half
  • 1/4 cup Parmesan cheese, grated
  • 4 large fresh basil leaves, chopped
  • Hot prepared egg noodles
  • Grated Parmesan cheese
  • Chopped flat leaf Italian parsley for garnish

Method

Heat butter and olive oil in a large saute pan over medium heat until butter is melted. Raise heat to medium high and add meat, salt, pepper and oregano. Brown meat and drain off fat, leaving at least 2 tablespoons in pan with meat. Add onion, mushrooms and garlic then cook until onion is almost translucent and mushrooms have released their liquid. Add wine, tomatoes and bay leaves. Reduce heat, cover and simmer about 30 minutes, stirring occasionally with a wooden spoon. Add cream and Parmesan cheese and simmer an additional 5 minutes. Remove from heat, stir in basil and remove bay leaves. Taste and adjust seasoning with additional salt and pepper if desired. Serve over egg noodles and sprinkle grated Parmesan cheese and parsley over top.
