Meaty Potatoes and Tomatoes


Serve saucy meatballs in mounds of mashed potatoes. Sausage adds flavor to the meatballs.



Ingredients:

  • 1 1/2 lg.ground beef
  • 1/2 lb. ground sausage
  • 1 cup bread crumbs
  • 1/4 cup milk
  • 2 eggs
  • 1 large or two small cans of stewed or diced tomatoes
  • 1/2 cup water
  • Mashed potatoes

Method

In a large bowl combine beef, sausage, crumbs, milk, and eggs. Shape into meatballs and brown in skillet. Drain and place in casserole dish. Stir tomatoes and water into meatballs. Bake in oven on 350 for 20 minutes. Take out and let cool. Prepare potatoes and serve. Mound mashed potatoes on plate, make indentation with spoon, place meatball in indentation and use meatball/tomato liquid as gravy.
