Mediterranean Meat Loaf

This meat loaf teams the ground beef with kalamata olives and roasted red pepper, and serves the slices with a tomato, lemon and feta topper.

Ingredients:

2 lbs Lean Ground Beef
½ cup Roasted Red Bell Pepper, diced
½ Small Red Onion, diced
½ cup Kalamata Olives, chopped
1 Egg, beaten
½ cup Plain Bread Crumbs
1 tsp + a Pinch of Salt
½ tsp + a Pinch of Pepper
1 tsp Garlic Powder
1 tsp Oregano
1 Large Tomato, diced
½ a Lemon, juiced and zested
½ tsp Olive Oil
½ cup Feta Cheese, crumbled

Directions:

Preheat oven to 375 degrees. In a large mixing bowl add beef, roasted pepper, onion, olives, egg, bread crumbs, 1 tsp salt, 1/2 tsp pepper, garlic powder and oregano; mix well with hands. Shape into a long loaf about 4 inches wide in a large baking dish. Bake 45-55 minutes until cooked through and no pink remains. Meanwhile mix tomato, lemon juice, lemon zest, oil and remaining pinch of salt and pepper. Slice meat loaf and top with tomato mixture and feta crumbles.

Helpful Tips:

For a lighter meal, replace beef with ground turkey.
