Mediterranean Meatloaf Wraps

Beef and lamb are the choice meats used in this recipe. Along with that, the tapenade, feta and dipping sauce really make this dish authentic.
 

Ingredients

  • 1/2 pound lean ground beef
  • 1/2 pound lean ground lamb
  • 1 beaten egg
  • 3 tbsp ground toasted pine nuts
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 4-8 inch warm flour tortillas
  • 1/4 cup olive relish (tapenade)
  • 1 cup shredded spinach
  • 2 Roma tomatoes chopped
  • 1/4 cup crumbled feta cheese
  • Dipping Sauce
  • 1/2 cup plain yogurt
  • 1/4 tsp lemon zest
  • 1 tbsp snipped parsley
  • 1 tbsp minced green onion
  • 1 tsp capers
 
Method

In a medium bowl, combine the beef, lamb, egg, nuts, oregano, salt and pepper. Mix well, then form into 8- 4 inch long logs. Place in a shallow baking pan and bake at 400 degrees for 12 minutes. Meanwhile, spread 1 side of each tortilla with the olive relish. Top with the spinach, tomatoes and cheese. Place 2 meatloaf logs end to end on top of each tortilla near an edge. Roll up cone fashion. Arrange the wraps on a platter. Combine the sauce ingredients and place in a small bowl set on the platter.
