Meghan's "En"credible Enchiladas

Spicy from the tomatoes, these enchiladas are easy and cheesy.
 

Ingredients

  • 1 lb lean ground beef or ground turkey
  • 3 cans of your favorite red enchilada sauce
  • 1 10-ounce can original Rotel tomatoes
  • 1 block Velveeta Light cheese
  • 20 yellow corn tortillas
  • 1 12 oz pkg of shredded sharp cheddar cheese

Method

Preheat oven to 425. In a large skillet, brown ground beef or turkey. Drain. Add cans of enchilada sauce and Rotel to meat and simmer on low. Mixture will be quite soupy. Cut Velveeta into 1/2 inch strips. You will have more than 20, but save the rest, and cut into small cubes. Take one tortilla at a time and soak it in the soupy mixture for approximately 20-30 seconds. With a pair of tongs, remove tortilla and place in a 9x13 inch baking dish. Add a stick of Velveeta and roll. Place each enchilada next to the next until the baking dish is full. Pour meat mixture over enchiladas, top with shredded cheddar cheese and the rest of the Velveeta cubes. Place in oven and bake for 20 minutes.

 

Notes: You may have to manipulate the last couple of tortillas into the pan to make everything fit.
