Mexican Beef & Rice Skillet

This easy skillet recipe combines cooked ground beef with tomatoes, green chilies, quick-cooking rice, and Homemade Taco Seasoning.Ingredients
- 1 lb extra-lean ground beef
- 2 cans diced tomatoes
- 2 cans diced green chilies
- 1 1/2 cups Minute rice
- Homemade taco seasoning (see below) to suit your taste. I like mine spicy so I use about 4 tablespoons.
- 3 cups water.
- Homemade Taco Seasoning--
- 6 tsp chili powder
- 5 tsp paprika
- 4 1/2 tsp ground cumin
- 3 tsp onion powder
- 2 1/2 tsp garlic powder
- 1/2 tsp cayenne pepper
- Mix all ingredients together and store in air-tight container.

Method
Brown ground beef & drain fat. Add all remaining ingredients and bring to a boil. Cover and cook for 7-8 minutes. Reduce heat to low and simmer until rice is tender.
Notes: The ground beef can be substituted with ground turkey or chicken. Cubed, cooked turkey or chicken could also be used.
