Mexican Beef & Rice Skillet

This easy skillet recipe combines cooked ground beef with tomatoes, green chilies, quick-cooking rice, and Homemade Taco Seasoning.

Ingredients
  • 1 lb extra-lean ground beef
  • 2 cans diced tomatoes
  • 2 cans diced green chilies
  • 1 1/2 cups Minute rice
  • Homemade taco seasoning (see below) to suit your taste. I like mine spicy so I use about 4 tablespoons.
  • 3 cups water.
  • Homemade Taco Seasoning--
  • 6 tsp chili powder
  • 5 tsp paprika
  • 4 1/2 tsp ground cumin
  • 3 tsp onion powder
  • 2 1/2 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • Mix all ingredients together and store in air-tight container.
 
Method

Brown ground beef & drain fat. Add all remaining ingredients and bring to a boil. Cover and cook for 7-8 minutes. Reduce heat to low and simmer until rice is tender.

 
Notes:

The ground beef can be substituted with ground turkey or chicken. Cubed, cooked turkey or chicken could also be used.
