Mexican meat loaf w/ mashed potatoes

A juicy meat loaf, mexican-style

Ingredients:

3 lbs Ground Turkey Breast, or ground beef. 1 ( 16 oz jar,) chunky mild salsa. 2 cups reduced-fat, shredded mexican-blend cheese. ½ cup crushe tortilla chips. 2 eggs. ¼ cup + 1 tbsp chopped cilantro. 1 ( 1 oz pkg,) taco seasoning. 3 lbs yukon gold potatoes, cut into 2" pieces. ¾ cup warm 1% milk. ¼ cup reduced-fat sour cream. 3 tbsp butter. ¾ tsp salt. sliced avocado.

Directions:

Heat oven to 350. In lg bowl, mix groung turkey breast, 1-1/2 cups salsa, 1 cup shredded chese, tortilla chips, eggs, 1/4 cup cilantro, and taco seasoning until just combined. In roasting pan, shape mix into 11 x 5" loaf pan. Bake 1 hour, 30 min. Sprinkle w/ 1/4 cup cheese. bake until cheese melts. Let stand 5 min before slicing. In lg pot, bring potatoes to boil in salted water, cook until tender. Drain. Return to pot. Add milk, sour cream, butter and salt, mash well. Stir in remaining cheese and cilantro. Top meatloaf w/ remaining salsa. Serve meatloaf w/ potaoes and slices of avocado.
