Mexican Meatloaf and Salsa Cream

Taco seasoning, tortilla chips, cheddar cheese and a creamy salsa topping spice up ordinary meatloaf.
 

Ingredients

  • 2 lbs ground beef
  • 2 cups crushed tortilla chips
  • 4 oz tomato sauce
  • 4 oz salsa
  • 1 package taco seasoning
  • 1 egg
  • Shredded cheddar or Mexican cheese
  • Salsa
  • Sour cream

Method

Heat oven to 350 degrees. Mix first 6 ingredients together and form into two loaf pans and bake 50 minutes. Check doneness as it may take an extra 10 minutes. Sprinkle with cheese and bake a few minutes more, until cheese melts. Let stand 10 minutes before slicing to serve. Salsa Cream: Mix together equal parts sour cream and salsa then serve with meatloaf. Serve with lettuce, tomato, salsa cream and cheese.
