Mexican Cornmeal Pie


Polenta is layered here with a beef and bean mixture, then topped with cheese for a complete meal in one dish.



Ingredients:

  • 3 cups water  
  • 3/4 cup cornmeal  
  • 1/2 tsp salt    
  • 1 lb browned ground beef
  • 1/2 medium diced onion  
  • 1/2 packet taco seasoning  
  • 2 tsp chili powder  
  • salt & pepper as desired  
  • 1/2 cup water  
  • 1 14oz can whole kernel corn  
  • 1 4oz can sliced or chopped black  olives  
  • 1 14oz can rinsed and drained black    beans    
  • cheddar cheese  
  • chili powder    

Method

Bring 3 cups of water to a boil, add cornmeal and salt. Reduce temperature to low and cook for 5 minutes or until thick and bubbly, stirring occassionally. Grease an 8x10 pan. Pour 3/4 of the cornmeal mixuture into the pan and spread evenly. Set aside. With the stove on medium low, stir together beef, onion, taco seasoning, chili powder, salt & pepper, and water. Simmer until liquid in the pan is gone. Add corn, olives, and black beans. Stir together and heat through. Layer the meat mixture over the cornmeal and spread evenly. Top with remaining cornmeal mixture. Top with desired amount of shredded cheddar cheese and sprinkle with chili powder. Bake in preheated oven at 350 for 15-20 minutes. Remove from oven and let set for 10 minutes. Serve.
