Mexican Goulash


A macaroni casserole with ground meat, plenty of cheese--chili powder provides south of the border heat.



Ingredients:

  • 1 lb ground meat; hamburger, pork or turkey
  • 1 large onion, finely chopped
  • 2 tablespoons chili powder
  • 1/2 cup water
  • 1 small can vegetable soup, undiluted
  • 1 package macaroni noodles
  • 2 cups grated cheese, American or sharp cheddar

Method

Mix meat, water, chili powder and onion in a sauce pan and bring to a boil. Cook until water has disappeared and meat is well cooked. Cook noodles according to your taste and drain. Mix soup into meat mixture. Layer meat, noodles, and cheese twice ending with cheese in a casserole and bake at 350 degrees about twenty minutes or until bubbly.

Notes: Can be made with rice adding a little soy sauce to flavor. A light version with ground turkey and reduced fat sharp cheese is even good. The chili powder is the key.
