Mexican Meatloaf


Lean ground beef is combined with eggs, bread, cracker crumbs, onion, chili sauce, horseradish, salsa, and canned mushrooms, and baked in a loaf pan.



Ingredients:

  • 2 lb. ground chuck
  • 3 eggs
  • 1 t. horseradish
  • 1 small can mushrooms, drained
  • 2 T. chili sauce
  • 7 slices bread, moistened slightly with water
  • 9 crackers, crushed fine with rolling pin
  • 2 medium onions, chopped fine
  • 1 cup mild or hot salsa, divided

Method

Mix all ingredients, using 1/2 of the cup of salsa. Retain remaining 1/2 cup. Put into oblong 9x5-inch pan. Cover with foil. Bake in 400 degree oven for 1 hour. Reduce heat to 300 for another hour. Then, 30 minutes before removing, uncover and pour remaining 1/2 cup of salsa over top of loaf.
