Mexican Rice Casserole


This is an easy casserole with a south-of-the-border flavor that uses ground beef, rice, tomato sauce, and cheese.



Ingredients:

  • 1-2 lbs. hamburger meat, browned & drained
  • 1 packet mild chili seasoning  
  • 2 cans Hunts Mexican Sauce  
  • 2 cans Campbell's Cheddar Cheese Soup  
  • 1-2 large packs Mahattma Yellow Rice
  • 16-32 oz. grated favorite mexican cheese              

Method

Mix the drained hamburger meat with the chili mix and mexican sauce. Let simmer on low while the rice is cooking. Prepare the rice as directed. In a 10 X 13 cake pan, spread hamburger mixture in bottome of pan. Next, spoon the prepared rice evenly over the hamburger. Spread the cheddar cheese soup evenly over the rice; and top with the grated cheese. Bake until cheese is melted at 325*. Enjoy!

Notes: Depending on what your family likes more of, you may vary the amounts of hamburger meat, rice and grated cheese. My family uses 1 meat, 2 packs rice, and 2 packs of the fancy shredded mexican (made by Kraft in the refrigerated cheese section of your grocery store).
