Mexicole Casserole


Casseroles are always a hit, this one, with a zesty cornbread layer, is no different. For those on a hectic schedule, it can be prepped ahead of time and then put into the oven when you get home from work.



Ingredients:

  • 1 lb. ground beef  
  • 1 (1 1/2 oz.) pkg. taco seasoning mix  
  • 1 (14 1/2 oz.) can whole tomatoes, chopped and drained  
  • 1 (8 1/2 oz.) can whole kernel corn, drained  
  • 1 (6 1/2 oz.) pkg. Mexican cornbread mix    

Method

Preheat oven to 400 degrees. Grease a shallow 2 quart baking dish; set aside. Brown ground beef in large skillet; drain. Stir in seasoning mix, tomatoes and corn. Bring to a boil, stirring occasionally. Pour into prepared dish. Prepare cornbread batter according to package directions; pour over ground beef mixture. Bake 15 to 20 minutes. Let cool 10 minutes.
