Mini Meat Loaves

Individual meat loaves made with lean ground beef and cheese--topped with a fruity brown sugar and ketchup glaze.
Ingredients
- Main Ingredients:
- 1/2 lb ground beef (can use lean or and/or ground turkey or chicken)
- 1 egg
- 1/3 cup bread crumbs, fresh or dried (can also use corn flakes or bran flakes cereal)
- 2 Tbsp sour cream
- 1 - 1 1/2 tsp Worcestershire sauce
- Dash of salt - optional
- Dash of pepper
- 2 tbsp chopped onion
- 1/2 cup shredded cheese (colby, Monterey Jack or mozzarella)
- Glaze:
- 1/2 cup ketchup
- 1/4 cup marmalade (any kind)
- 1/4 cup fruit juice (orange, peach, grape work best)
- 2 Tbsp brown sugar

Method
In medium size mixing bowl blend all main ingredients together. Once blended together form into mini loafs or balls and place on non-greased baking sheet about 1 1/2" apart. In smaller mixing bowl combine all the glaze ingredients and beat together with a whisk or a fork. Top each loaf with glaze. Bake in preheated 325 degrees oven for about 12 - 15 minutes depending on oven. Serve immediately.
Notes: Save left over rolls in fridge for next days meat loaf sandwiches or store in freezer for another time.
