Mocca'a Hearty Stew

This beef stew doesn't take hours to cook. The cubes of meat are browned and combined with carrots, green peppers, mushrooms, broth and red wine.
 

Ingredients

  • 2 cups sliced, peeled carrots
  • 2 lbs top sirloin beef steak, in cubes
  • Salt and pepper to taste
  • 1/2 stick (4 tbsp.) butter
  • 2 green peppers, chopped
  • 2 pkgs shiitake mushrooms, chopped
  • 3 green onions, chopped
  • 1 1/2 tbsp thyme
  • 2 cups red cooking wine
  • 2 cups beef broth
  • Hot rice or noodles

Method

Cook carrots in water until tender, about 8 minutes; drain. While carrots cook, sprinkle beef with salt and pepper. Melt 3 tbsp of the butter in a large skillet over medium-high heat. Saute beef until brown on all sides but still pink in center. Remove beef from skillet. Melt remaining butter in same skillet, add vegetables and saute for 5 minutes. Add thyme, cooking wine and beef broth to skillet, then increase heat and boil until reduced to 2 cups, scraping browned bits; allow about 20-25 minutes. Return beef and carrots to skillet; cook 1 minute to blend flavors. Season to taste with salt and pepper. Serve with hot noodles or rice.

 

Notes: I prefer the rice; it makes it more hearty.
