Mommy's Best Beef and Barley Stew


Beef stew meat, potatoes, carrots, corn, tomatoes and onion are combined with barley, broth, canned soup & gravy in this crock-pot stew.



Ingredients:

  • 1 10 1/4 oz can beef gravy
  • 1 10 3/4 oz can cream of mushroom soup
  • 1 14 oz can beef broth
  • 1 15 oz can whole kernel corn, drained
  • 1 14 oz can diced tomatoes
  • 1 medium onion, diced
  • 5 medium potatoes, diced
  • 5 long carrots, sliced
  • 1/4 cup barley
  • 1/4 to 1/2 tsp garlic salt
  • 1/4 tsp (KC Masterpiece) BBQ seasoning
  • 1 tsp sugar
  • 2 lbs. beef stew meat in cubes

Method

In a 5- or 6-quart slow electric cooker, pour all cans of soup, gravy, broth, corn, and tomatoes. Add garlic salt, BBQ Seasoning, and sugar. Add onions, potatoes, carrots, and barley. Add stew meat. Stir mixture. Add water if necessary to make sure solids are covered with moist ingredients. Cover and cook for 4 hours on high or 8 hours on low. Serve with biscuits or pull-apart rolls.

Notes: This tasty classic only takes some very basic pantry items. Reheats great for easy leftover nights or healthy lunches on the go.
