Mom's Meatballs

Ground beef is mixed with eggs and seasonings, formed into meatballs, then simmered in water and cooked in a sweet, herbed tomato sauce.
 

Ingredients

  • 2 eggs
  • Paprika, to taste
  • Garlic powder, to taste
  • Onion powder, to taste
  • Salt and pepper, to taste
  • 1 lb ground beef
  • Cooking oil
  • 1 onion, chopped fine
  • 2 cloves garlic, chopped fine
  • 1 15-oz can tomato sauce
  • 4 tsp oregano
  • Basil, to taste
  • 4 tbsp (1/4 cup) sugar
  • Fresh basil

Method

Boil a pot of water on stove. In a bowl, combine eggs, paprika, garlic powder, onion powder, salt and pepper. Add meat. Form into 1-inch balls; place into boiling water to cook and remove fat from the meat. In a separate saucepan, pour in a little oil; fry onion and garlic until golden, but do not burn. Keeping on low heat, add tomato sauce, oregano, basil, and more onion powder, garlic powder, salt and pepper. Stir in sugar. Drain the cooked meatballs and add to sauce. Let simmer on very low heat for 45 minutes to allow sauce to absorb the meat flavor. Garnish with fresh basil.
