Mom's Meatloaf Dinner

An entire meal everyone will love. Comfort food extraordinaire. This dish is homemade and made from the heart.
Ingredients
- 2 lbs ground beef, do not use lean
- 1 sleeve buttery crackers, crushed
- 1/2 onion, finely chopped
- 2 eggs
- 1 pk onion soup mix
- Salt and pepper to taste
- Family size tomato soup
- 1 cup water
- 1/2 cup potatoes, peeled and cubed
- 1/2 cup carrots, peeled and diced

Method
In a large bowl, with your hands, squish together the ground beef, crackers, onions, eggs, onion soup mix, salt and pepper. Form mixture into a loaf. Mix the water and tomato soup. In a roasting pan, pour 1/4 can of the tomato soup. Put the meat loaf in the center of the pan. Place the potatoes and carrots around the loaf then pour the rest of the tomato soup over the top, covering evenly. Bake for 90 minutes at 350 degrees.
