Ingredients:
2 lbs | Lean Ground Beef |
1 lbs | Fresh Mozzarella Cheese, sliced ¼" |
1 | Small Loaf Day Old Italian Bread |
2 | Eggs |
1 | Small Onion, chopped |
3 Tbsp | Finely Diced Red or Green Bell Pepper |
4 | Garlic Cloves, chopped |
¼ cup | Fresh Parsley |
¼ cup | Fresh Basil |
Salt & Pepper, to taste | |
Topping: | |
½ cup | Canned Tomato Sauce |
½ cup | Ketchup |
¼ cup | Brown Sugar, unpacked |
Directions:
Preheat oven to 350 degrees. In a large bowl, add broken pieces of Italian bread to water. Soak, then squeeze out water. Discard all water, adding bread back to bowl, while pulling apart. Add eggs, onion, peppers, garlic, parsley, basil, salt and black pepper, then mix well. Add ground beef to bread mixture. In a large baking dish, spread out half of the meatloaf mixture. Add mozzarella cheese on top, across the center of the mixture. Layer remaining mixture on top. Mix the topping ingredients together and spread mixture on top of meatloaf. Bake to 165 degrees or 45-55 minutes. Let sit for a few minutes before slicing.
