My Big Fat Greek Gridiron Hero Sandwich


This sandwich takes a little bit of preparation time, but it is sure to be a show stopper and big crowd pleaser.



Ingredients:

  • 1 3 foot loaf crusty Italian or French bread
  • 1 cup bottled Italian dressing
  • 8 ounces baby spinach leaves
  • 8 ounces iceberg lettuce
  • 1 cucumber, thinly sliced
  • 10 ounces sliced provolone cheese
  • 1 red onion, thinly sliced
  • 2 large ripe tomatoes, sliced
  • 12 large purchased deli meatballs
  • 1 cup Greek olives, pitted and sliced
  • 1 cup banana or pepperoncini peppers, sliced
  • 1 cup crumbled feta cheese
  • Dressing ingredients:
  • 1 cup plain yogurt
  • 1/2 cup sour cream
  • 3 tbsp milk
  • 1 tsp lemon pepper seasoning
  • 1/2 tsp dried oregano
  • 1 tsp garlic salt

Method

Combine all dressing ingredients and mix well. Prepare dressing 12-24 hours in advance. On Game Day, roughly chop the spinach and iceberg lettuce. Place in medium bowl and mix thoroughly with the Italian dressing. Slice bread lengthwise. Scoop out soft insides of loaf, leaving a 1 inch? shell. Spread softened butter or margarine on top half of loaf (this will help prevent sogginess). Spread lettuce mixture to edges on bottom half of loaf .Layer remaining ingredients in order shown. Unless serving immediately, wrap sandwich tightly in plastic wrap and transport dressing separately. When ready to serve, remove top and spread sandwich evenly with yogurt dressing. Replace top and slice into segments with sharp serrated knife.
