Chinese style stuffed beef mushrooms

1lb 95% Leanground Beef
1 Egg
3 Tbsp Oyster Sauce
3 Tbsp Sweet Chili Sauce
3 Tbsp Soy Sauce
40 Medium Mushrooms
¼ tsp Ground Black Pepper
¼ tsp Chili Flake
¼ tsp Granulated Garlic
2 Fresh Garlic Cloves Minced
15-20 Mushroom Stems Chopped Finely
3 Green Onions Chopped Finely


Preheat oven to 425 degrees. Destem mushrooms reserving 15-20 stems finely chopped. Lightly brush mushrooms with damp paper towel to remove any grit. Place mushroom caps on shallow baking pan stem side up. Add beef,green onions,garlic, egg, oyster sauce, chili sauce, soy sauce, ground pepper, chili flake, granulated garlic and mushroom stems to bowl. Mix, combining ingredients. Over stuff each mushroom with beef mixture. Place baking pan in oven for 15 minutes. Drain liquid from baking pan. Back in oven 5-7 minutes more until meat is browned and mushrooms have softened some.
